Pomegranates are considered one of today’s Super Reds! Red fruits and vegetables such as tomatoes, cranberries, red apples, beetroots, cherries, red grapes, red onions, strawberries, watermelon and more contain a range of beneficial nutrients.

Some of these include lycopene, ellagic acid, Quercetin, and Hesperidin, to name a few.
Serves 4

4 large pomegranates, seeds removed
2/3 cup (140g) caster sugar
1/4 cup (60ml) cold water
5 tsp (16g) powdered gelatine

Reserve 1 tablespoon of pomegranate seeds. Use a food processor to process seeds until a coarse puree forms. Strain through a fine sieve into a bowl, pressing with back of a spoon to extract juice. Discard solids. Line a sieve with muslin and place over a bowl. Strain juice through sieve. Measure juice. Add enough water to make 600ml of liquid.

Place pomegranate mixture and sugar in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Remove from heat. Meanwhile, place cold water in a heatproof cup. Sprinkle with gelatine and set aside until gelatine softens. Place cup in a saucepan of barely simmering water and heat for 2-3 minutes or until gelatine dissolves. Add gelatine to pomegranate mixture and stir until well combined. Set aside to cool to room temperature.

Divide mixture among four 150ml-capacity jelly moulds. Place on a tray in the fridge for 6 hours or overnight to set. Turn jellies on to plates and sprinkle with reserved pomegranate seeds

Tip: To extract pomegranate seeds, cut fruit into quarters, place in a bowl of water and separate the seeds from the membrane. Scoop off and discard any membrane that floats to the surface, then drain the seeds.

Researchers believe this may be due to the seed oil’s high concentration of CLA (conjugated linolenic acid) which could be the component that accounts for a reduced risk of developing diabetes.

Studies to date have only been undertaken with mice, so it’s a little too early to confirm whether pomegranate seed oil significantly reduces the risk of developing diabetes in humans. As one of today’s most studied super fruits, pomegranates are sweet, juicy and bursting with flavour. Here are a few helpful hints on how to prepare and eat a pomegranate!

CUT the crown end of the pomegranate to allow the seeds to show

SLICE the rind into but be careful not to slice all the way through

SOAK the pomegranate upside down in a bowl of water and let it sit for five to ten minutes. This will help release the seeds so that they sink to the bottom of the bowl

BREAK the rind apart and remove the membranes and flesh to allow any remaining seeds to sink to the bottom of your bowl.

DRAIN the water from the seeds using a colander, then pat them dry with paper towel. The seeds are now ready to eat! They can also be stored in an airtight container in your fridge for two days.

Eat them as they are, add them to yoghurt or your favourite pomegranate seed recipes – keep an eye on our blog for new recipe postings or share some of your own with us!
